Our dense and powdery cornstarch comes right from the endosperm of the corn kernel. Cornstarch is a terrific ingredient for thickening puddings, pie fillings, sauces, soups and stews. It’s also widely used in many cake and cookie recipes to produce finely textured baked goods. Cornstarch is often included in shortbread recipes, where it helps contribute a crumbly and tender texture in the finished product. 1 Tbsp Bob’s Red Mill Cornstarch = 2 Tbsp Flour
Cornstarch has twice the thickening power of flour. When a gravy, sauce, soup or stew recipe calls for flour, use half as much cornstarch to thicken. To thicken hot liquids, first mix cornstarch with a little cold water until smooth. Gradually stir into hot, liquid until blended. Stirring constantly, bring to boil and boil one minute.
