1/3 cup Oil, melted Coconut Oil or melted Butter/Ghee
1/2 cup Water
1 package Bob’s Red Mill® Grain Free Blueberry Muffin Mix
Preheat oven to 350°F. Line a standard muffin tin with 6 liners, then coat liners with non-stick cooking spray.
Whisk together egg, oil, water and muffin mix. Fill each muffin cup 3/4 full. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Let cool before serving.
Makes 6 large muffins.
12 Muffin Variation
Prepare as above, lining a standard muffin tin with 12 liners. Coat liners with non-stick cooking spray. Spoon batter evenly between the cups, then bake 25-30 minutes.
Makes 12 small muffins.
